There are so many yummy things to make with them. I like to chop them up with my favorite ingredients, and saute about 15 minutes until very tender. (I used tomatoes, white onion, garlic, eggplants, parsley, basil, and 2 cups of water & added the balsamic at the end.) This mixture was really tasty over cauliflower rice. You could add: goat cheese, sausage, or olive oil.
Eggplants are rich in anthocyanin, which help prevent cellular damage from free radicals. Free radicals are NOT rad, they are examples of imbalances in our cells, on an atomic level. Eating deep colorful foods like eggplant, pumpkin, berries, greens, etc. can help neutralize free radicals.
